I am always looking for something new to make and had a craving for some soup. With temperature dropping, a bowl of soup, salad and some crackers just sounded good. I searched the Kuner’s website for a new recipe and found one for corn chowder. Best thing was, I already has most of the ingredients in my kitchen.
Now I really wanted to make this. Quickly I put together my grocery list with the few things I needed and rushed out to the store. I didn’t have to go far to find everything I needed. In fact, I found Kuner’s canned corn and creamed corn at WalMart here in Henderson. The one thing I recommend is to not forget the grocery list. I had fresh parsley written on it, but left the list at home. I was in such a hurry to get my ingredients and without my list, I grabbed a bunch of fresh cilantro instead. Oops. However, I was not going to let grabbing the wrong ingredient get in the way of my fresh, hot corn chowder. So, I replaced the parsley required in the recipe with cilantro. It was different than expected, but a pleasant surprise. In fact, I think I like my “spicy” corn chowder much better than I would have if I used parsley. |
In addition to my using the wrong ingredient, I do believe the brand of corn I purchased had a lot to do with how delicious this dinner was. I have had canned corn in the past, however, many were bland and needed to be spiced up. For the first time, I tried Kuner’s canned corn and creamed corn and I was introduced to a new world of flavor. It was so flavorful, I truly believe it was what made the corn chowder so yummy. When done, I paired my corn chowder with a small side salad and some crackers. It was a great treat and even our son loved it. Now I just need to double the recipe and make some to freeze for when the cold winter months are here. And yes, I am keeping the cilantro in my corn chowder recipe. |
